Producing industrial hardware since the late 70's we are happy to share our experience with the growing mbed community. Our first product takes the NXP LPC1768 mbed module out to industrial standard 24V digital i/o and fits in a rail mount enclosure. See this as an example for an industrial mbed application - we are happy to do a similar board (and extensions) made to order matching your exact i/o requirements. We also do mbed-footprint processor modules like the "kBed" Kinetis K60 module we already offer as an alternative.
