LPC800-MAX from NXP is an mbed enabled platform which combines the advantages of the mbed ecosystem and Arduino form factor.

There is no one "best" board: otherwise, there would be no need for other boards. You need to balance processing power, memory, cost, etc., to come up with a "best for your needs" choice. I like the KL25Z because it's cheap and has a number of sensors on-board, but I wouldn't use it where an LPC1768 would be more appropriate. Evaluate your application and find the best fit for what you're trying to accomplish.
