I posted this document in the LPC2000 Yahoo Group a long time ago but thought it might also be useful to post it here.
This document provides a concise summary of I2C transcations, references, etc. specific to the I2C controller in the NXP LPC microcontrollers. This document details the various interrupts that occur during various I2C transactions.
