Portable potentiostat
Potentiostats (http://en.wikipedia.org/wiki/Potentiostat) are used to do electrochemical measurements. Commercial models often cost thousand or tens of thousands of dollars, but circuits need not be so complex to do useful measurements. I am planning on using the mbed to provide an output signal via the D/A converter, then using the A/D converter to measure the resulting current.

This above paper designs a potentiostat around an XMEGA, but this looks like a very reasonable job for an mBed.

Portable potentiostat
Potentiostats are the workhorse instrument of electrochemistry, but cost tens of thousand of dollars. This project is good both for field studies, and for chemical education. Similar projects have been put together for about $150 US
