convert digitial i/o pin to analog in?

I ran out of analog pins due to hooking up an LCD to the mbed. Is it possible to convert a digital i/o pin to analog in? If not, what else can I do to attach my analog temperature probe?

Besides using a digital temperature sensor or a seperate ADC IC, you can only change the pins you use for your LCD display. There is no reason you would need pins which can be used as AnalogIn for them.
