Where do i find the original program?
Where can I locate the original built-in program which uses the accelerometer, touch pad to control the LED? Am I correct in saying that only one program resides at a time?

You can only put one program on your board.
For controlling the LED with the TSI (Touch Sensor Interface), you can use this library http://mbed.org/teams/mbed/code/FRDM_TSI/
