HD44780 Compatible LCD Displays
I'm looking for a list of HD44780 compatible displays which can be used with Simon Ford's popular TextLCD library for controlling various LCD panels based on the HD44780 4-bit interface. Am I able to just buy any 16x2 display or must it be particular models?

Just about any of them will work. Some are 3.3V and some 5V - both will work if you change LCD from Vout to Vu pins for +power.

In most cases you will need to solder on the header pins yourself.
Finding a datasheet for a random LCD can be very hard.
Just about any 16x2 character display is compatible with the HD44780. Some may have a compatible controller like the Samsung KS0066 or Sitronix ST7066U. Checkout http://www.crystalfontz.com/products/index-std.html
You can also find real cheap displays on ebay.
