In principle you could use mbed in space applications. However, the space environment usually demands minimal powerrequirements, minimal weight and/or volume, high reliability, radiation hardening, extreme temperature ranges etc. A module like mbed has a lot of stuff onboard that you probably dont need and want to get rid off in a nanosatellite: interface chip, ethernet chip, linear powerregulators, pinrows etc. The lpc1768 is also probably not radiation hardened and wont meet space temperature specs. Obviously software verification and reliability of mbed libraries, tools etc is also an issue. Having said that, go for it!
